Tuscan Linguine with Jumbo Shrimp

 

So Delicious !!

 

1 lb linguine   Cook el dente

 

1 lb Large shelled jumbo shrimp, shell removed and clean

1 tbsp olive oil

Cook shrimp in large skillet in olive oil , one minute per side, remove shrimp, place shrimp on a platter, let rest.

 

Add ingredients to same skillet

1 large onion diced

2 garlic gloves minced

5 small delicious tomatoes , chopped

1 tsp salt

1/2 tsp Pepper

1/2 fresh crack pepper

1 cup white wine, I used Pinot Grigio

4 mini dill pickles diced

4 dried chili peppers

4 sun dried tomatoes in oil chopped

 

cook till softened

Last few minutes add hand full off.        Arugla

Cook on Simmer for about 5 minutes

 

In a large bowl add shrimp , sauce and linguine , mix well

Serve in beautiful bowls

Garnish  parsley

Serve Immediately
