Steak Soup-Vegetable Beef Soup

1 tbsp olive oil

2 cups left over lean strip steak or any good quality steak

1 large onion chopped

2 garlic minced

1 cup carrots diced

3 celery stalks diced including leaves

5 medium red potatoes diced

8 cups water

8 bouillon cubes

1 28 oz whole tomatoes diced, including juice

2 tbsp Worchestershire sauce

1 tbsp steak sauce

1 tbsp Italian seasoning

1 tsp season salt

1 tsp black pepper

1 tsp salt

 

In a large soup pot over medium heat add olive oil, add onions & garlic

cook 5 minutes, add carrots, potaotes & celery, cook another 5 minutes,

stirring frequently

Add all remaining ingredients in same soup boil

Bring soup to a boil, let boil 15 minutes, stirring again frequently

Cover pot cook 2 hours or all day long.

 

This soup is really tasty & on the low fat side
