Cast Iron Skillet
Flour Shells
Left over filets cooked medium sliced thin
1 Tbsp olive oil
1/2 green pepper sliced thin
1/2 red pepper sliced thin
1 onion sliced thin
2 garlic gloves minced
1 medium jalapeno pepper minced, remove seeds
Shredded Colby jack cheese
Shredded Mozzarella cheese
Sautee filets until warm in cast iron skillet with 1 tbsp olive oil on medium heat
Remove filets place on platter
Add peppers, onions, jalapenos and garlic
Cook till tender
Add filets back to skillet and mix well until warm
Remove meat and vegetables and place on plate
Add move olive oil and place one flour shell in skillet
Add meat and vegetables spread evenly over flour shell
Add had full of both cheese
Fold over flour shell
Remove and place on a plate
Add move olive oil with each knew quesadilla if skillet is dry
Garnish Steak Quesadillas
with
Salsa and Sour Cream
