Spinach & Arugla Salad with Hot Bacon Dressing

 

Salad

Fresh baby spinach

Arugla

2 boiled eggs chopped

4 to 6 bacons chopped.  Enough bacon grease for 1/4 cup

Pitch of shredded Swiss cheese

 

Bacon Dressing

1/4 cup bacon fat

1 small shallot minced

2 garlic gloves minced

1 tsp honey mustard

1 tbsp cooked bacon

2 tsp brown sugar

3 tbsp balsamic vinegar

salt & pepper to taste

 

Cook bacon till nice & crispy in large skillet

When bacon is done, spoon bacon out of pan let rest on paper towel

Re heat bacon grease add shallots & garlic

Cook about 5 minutes

Return bacon to pan & all remaining dressing ingredients

Cook till warm

 

Arrange Salad ingredients in large bowl

Add dressing

Sprinkle with fresh crack black pepper
