Spicy Spinach Lasagna

9 x 12 pan sprayed with cooking oil

no boil lasagna noodles

 

 

1 jar Arrabbiata sauce, use good expensive sauce

1/2 cup low fat Alfredo sauce, lowest fat

 

1 tsp olive oil

5 garlic minced

1/2 large onion diced

10 oz fresh baby spinach

 

16 oz free ricotta cheese

8 oz low fat cottage cheese 1%

1/3 cup low fat shredded Parmesan cheese

1 cup Mozzarella shredded cheese

1 cup artisan shredded cheese

1 egg

1/4 tsp salt

1/4 tsp black pepper

1/4 tsp nutmeg

1 tsp dried basil

1 tsp dried oregano

 

 

Melt olive oil in sauce pan over medium heat, add minced garlic &

red onion, satue until tender, add spinach & stir to combine, let rest

 

Preheat over 375

 

In a large bowl add ricotta cheese, cottage cheese, 1 egg, small amounts

of each Shredded Parmesan cheese, Mozzarella cheese, Artisan cheese, salt, pepper,

nutmeg,  basil & oregano, stir well, add minced garlic, red onion, & spinach

 

Spread a little bit of tomatoe sauce on bottom of prepared pan. Layer with 3

lasagna noodles, 1/3 of cheese & spinach mixture, 1/4 of the tomato sauce &

1/4 of each 3 different cheeses,  Parmesan, Mozzarella, & Artisan, Repeat layers

& repeat one more time, Ending with noodles, red sauce & cheese

 

Add Alfredo sauce to top of lasagna, spread evenly

Sprinkle lasagna with grated Parmesan cheese & 1/2 tbsp dried parsley

 

Cover pan with foil, bake 40 minutes

Remove foil & bake uncovered for additional 10 minutes

Let lasagna rest for 15 minutes before serving
