Spicy Mexican Rice

INGREDIENTS

2 tbps olive oil

1/2 green pepper chopped

1/2 red pepper chopped

1 jalapeño pepper minced

1 medium onion chopped

3 garlic gloves minced

1/4 tsp salt

1/4 tsp pepper

1/4 tsp cumin

1/4 tsp chili powder

1 cup white rice

1 cup chicken broth

8 oz tomato sauce

1 8 oz can tomatoes with green chilis

Garnish

cilantro and fresh limes

Cook all vegetables with olive oil on medium heat. Cook until nice and tender

Add salt, pepper, cumin and chili powder stir into vegetables

Add rice, chicken broth, tomato sauce and can tomatoes

Stir bring to boil, mix well

Reduce heat to low cover and cook for 20 to 25 minutes

Garnish rice with fresh cilantro and fresh limes

Add more chili powder if you want the rice a little spicier
