2 large boneless chicken breast
( sliced length wise, and then into 1 inch cubes,
after cooking slice chicken in half 1 more time)
salt, pepper, garlic powder, oregano , to taste
1 tbsp olive oil
2 garlic gloves minced
1 medium onion, diced
1/4 cup reduced grated Parmesan cheese, extra for topping
1 cup free half & half
1 24 oz jar Arrabbiata sauce
9 cooked lasagna noodles
1 cup fresh parsley chopped
2 cups fresh baby spinach chopped
2 cups reduced Mozzarella cheese shredded
Preheat oven 350
Heat olive oil over medium heat heat in large skillet, add chicken
Sprinkle with salt. pepper, garlic powder & oregano
Sear the chicken for about 2 minutes, flip chicken cook again 2 minutes
Place chicken on cutting board & slice each piece length wise
Add onions & garlic to same skillet, cook till tender
Pour in cream, Arrbbbita sauce & Parmesan cheese & parsley
Cook on low 15 minutes
In 9×13 pan prepared with cooking oil, add a scoop of sauce on bottom of pan
layer 3 noodles over sauce
Place half chicken over noodles, add 1 cup spinach, sprinkle with half
Mozzarella, followed by half parsley
Repeat the layers once, more, starting with noodles, sauce, chicken, spinach, parsley & Mozzarella
( 3 layers, 9 noodles )
Bake covered 40 minutes, bake additional 15 minutes uncovered
Cool slice & serve
This truly is a mouth watering meal
Serve with fresh bread & a beautiful salad
