Smoke White Bean & Ham Soup

1 lb dried white beans

6  to 8 cups water

 

1 tsp olive oil

1 large onion diced

4 large carrots peeled & diced

4 stalks of c diced with leafy greens

4 large garlic gloves minced

3 cups left over spiral ham chopped

5 cup chicken broth

4 cups water

2 bay leaves

1 tsp pepper

2 tsp salt

 

Overnight soak Rinse & soak beans, Add 6 to 8 cups water

to 1 lb of dried beans

Let stand overnight. Drain beans & rinse the beans

 

Heat olive oil in large Dutch oven, add onions, carrots, celery

& garlic, cook till tender about 10 minutes

Drain beans & add all remaining ingredients to large pot

 

Cover Soup & bring to a strong boil, turn heat to low

cook for 4 hours, stirring soup frequently

Truly a flavorful & delightful soup
