Skinny Penne Pasta Alfredo

12 oz Penne pasta

1/2 tbsp butter

2 garlic gloves minced

3 tbsp all purpose flour

1 cup fat free chicken broth

2 cups fat free skim milk

1/2 cup grated Parmesan cheese

1/2 tsp salt

1/4 tsp pepper

 

Diced dried parsley & sprinkled cayenne pepper for garnish

 

In large pot of boiling water add Penne pasta, cook till tender, drain

Mean while melt butter in large skillet over medium heat.  Add garlic, saute 1 minute, stirring frequently. Sprinkle in flour & stir to combine.  Cook for another minute then slowly pour in chicken broth & fat free milk. Continue cooking & whisking constantly , until sauce is bubbly & thickened.  Stir in Parmesan cheese, salt & pepper. Remove from heat.

Toss Penn pasta with Alfredo sauce

Garnish with parsley & cayenne pepper

 

Serve immediately or cold
