Skinny Coconut Shrimp Over Jasmine Rice

 

I truly love coconut shrimp

You will love the taste & the amazing warm honey sauce!!

15 medium size shrimp with shell on

1 cup shredded sweetened coconut

1/2 Panko bread crumbs

3 tbsp flour

2 eggs

salt & pepper to taste

soy sauce

green onion

 

( Warm Honey Sauce )

1/3 cup honey

1 tbsp peach jelly

1 fresh squeezed lemon

1/2 tsp cayenne pepper

Heat warm honey sauce in medium sauce pan, bring to boil, set aside

 

Spray baking pan with cooking oil

Preheat over 425

3 separate bowls

  1. flour salt & pepper
  2. eggs whisked
  3. Panko bread crumbs & coconut

Dip shrimp in flours, shake shrimp a little

Dip shrimp in eggs, shake a little

Dip shrimp in Panko bread crumbs

repeat,

Lay shrimp on cookie sheet, bake in oven for 10 minutes

Turn shrimp cook another 5 minutes

 

Serve shrimp over Jasmine rice

Drizzle warm honey sauce all over shrimp & Jasmine rice

Sprinkle soy sauce over shrimp & rice

Garnish with green onions

 

Jasmine rice cook per package recipe

I doubled the recipe

Rice & water

a litlle hit, I always add extra water when making rice

will not get sticky or hard

 

So delightful !!
