Silky Tomato Soup with Lobster

2 tbsp olive il

1 tbsp butter

1 large white onion chopped

1 large garlic glove minced

2 tbsp flour

3 cups chicken broth

1 28 oz whole peeled tomatoes with juice

1 1/2 tsp sugar

1 spring fresh thyme

1/2 tsp salt

1/4 tsp pepper

2 tbsp fresh basil

1 cup whipping cream

1 cup dry sherry

3 tbsp lobster base

3 small lobsters. Steamed

In a large pot add olive oil, butter, onions and garlic, sautéed until soft

Add flour stir well

Add chicken both, tomatoes, sugar thyme, salt, pepper, basil, whipping cream, dry sherry and lobster base

Cook 10 minutes

Use hand mixer and place in tomato soup, pulse and blend well

Cook another 20 minutes

Meanwhile steam lobster with shells and cover,

Steam 3 minutes

Peel shells off lobster, chop lobster and set aside

Scoop tomato soup in bowl and add chopped lobster

Sprinkle soup with parsley
