Shrimp Ceviche

This appetizer is amazing and a crowd pleaser ,

 

1 lb cooked shrimp, peeled and deveined

1/4 cup fresh lemon juice , about 2 lemons

1/4 cup fresh lime juice, about 4 small limes

1/2 cup fresh squeezed lemon juice

2 medium tomatoes diced

1/4 cup seedless Cucumber diced

2 jalapeño peppers minced

1 green apple peeled and diced

1/4 cup shallots  finely minced

1 avocado pitted and diced

1/4 cup fresh parsley chopped

1/4 tsp pepper

1/4 tsp salt

 

Instructions::

Chop shrimp into. 1/2 inch pieces and transfer to a bowl.  Set aside

In a small bowl whisk together lemon, lime and orange juice to combine. Pour over shrimp and marinade for 20 minutes.

Add the tomatoes, cucumber, jalapeño, apple, parsley, shallots, salt and pepper. Toss the ingredients to combine and allow to marinate for an additional 10 minutes.  Stir in avocado.

Serve Ceviche with tortilla chips and club crackers
