Shredded Chicken Chili

Crock pot sprayed with cooking oil

 

2 lbs boneless chicken breast

 

1/2 red pepper diced

1 large onion diced

4 garlic gloves minced

1 jalapeno pepper minced with seeds

1 tsp oregano

3 tbsp cumin

3 tbsp hot Mexican chili powder

1/2 tsp cayenne pepper

3 tsp salt

1 14.5 oz diced tomatoes

1 14.5 oz diced tomatoes with green chilies

1 14.5 oz kidney beans rinsed

2 14.5 oz navy bean rinsed

2 cups chicken broth fat free

2 dash Cholula hot sauce

4 oz green chilies drained

1 small chipotle peppers diced

 

Combine all ingredients in crock pot

Place chicken breast of top of ingredients

Cook all day

Before serving, shred chicken breast with fork, stir & continue cooking

 

Top of with sour cream & shredded cheddar cheese
