Scramble Egg Muffins On The Go

3 eggs

8 egg whites

1/4 red pepper minced

1/4 yellow pepper minced

1/4 button mushrooms minced

1/3 cup red onion minced

1/2 tsp black pepper

1 cup diced Canadian bacon

1/2 cup + 1/3 cup reduced shredded mozzarella cheese

2 tbsp grated Parmesan cheese

1/2 cup fresh parsley chopped

 

Preheat oven 350

 

Spray muffin tins with cooking spray

Lay fresh parsley in each tin (12 each)

In a sauce pan on medium heat saute peppers, onion, mushrooms till tender,

Add Canadian bacon & black pepper, cook for a few minutes

 

In large mixing bowl, mix eggs, egg whites, peppers, onions, mushrooms, Canadian bacon

1/2 cup Mozzarella cheese & grated Parmesan cheese

 

Pour egg mixture over parsley in muffin tin

 

Top with 1/3 cup Mozzarella cheese

Bake 15 – 20 minutes

( In the morning, microwave egg muffins for a few seconds)
