Rum Marinated Grilled Chicken Sandwich

6 boneless chicken breast

 

1/2 cup dark rum – I use Barcardi Select

1/4 cup orange juice

2 tbsp brown sugar

2 tbsp soy sauce

pinch ground ginger

1/2 tsp black pepper

2 garlic gloves minced

(Marinate all ingredients above in a large zip lock baggie)

Marinate a few hours or over night

 

Grill chicken over charcoal coals with Weber grill or gas grill

2 minutes before chicken is done, no pink, top each piece of chicken with

 

2 slices Bacon ( box Oscar Meyer) less fat- cooked, & low fat Swiss cheese slices

Cover chicken breast with lid slightly, until cheese melts

Serve on bun

Garnish with avocado, barbecue sauce, lettuce & tomato
