Roasted Cornish Hens

1/4 tsp black pepper

1 tsp dried thyme

1 tbsp dried basil

1 tsp rosemary

3 tbsp olive oil

lemon sliced- seeds removed

2 Cornish hens

butter

 

1/3 cup green pepper diced

2 stalks celery diced

1 large shallot diced

 

Place the hens on a baking sheet lined with aluminum foil

Place 2 slices off lemon under skin top of hens

 

In a mixing bowl, stir together pepper, thyme, basil, rosemary & olive oil

Rub mixture all over hens

 

Loosely stuff the cavities of each hens with green pepper, celery & shallots

add 1/2 tbsp butter on top of hens

Roast hens in preheated oven for 1 hour

Take hens out of oven, spoon juice over each hen, put back in oven

cook additional 5 minutes, take out of oven, let rest for 10 minutes
