Pumpkin Soup

5 cups chicken broth

2 cups Libby’s can pumpkin puree

1 cup chopped onion

1/2 tsp dried thyme

2 garlic gloves minced

1/2 tsp white pepper

1/2 tsp allspice

1/2 tsp cinnamon

1 Tbsp honey

 

1 cup half & half

Fresh parsley

 

Heat all ingredients in large pan except half & half & fresh parsley

Bring to boil, reduce heat to low, & simmer for 30 minutes uncovered.

 

Puree the soup with a hand blender

 

Add half & half cook for another 30 minutes

Serve into soup bowls & garnish with a little fresh Parsley

Beware this soup does have a spicy kick to it!
