Penne with Vodka and Red Sauce

16 oz penne cooked To perfection drained, while water is boiling add 2 tsp salt, add Pasta cook and stir

1/4 cup sliced prosciutto diced

2 tbsp olive oil

1 large shallot diced

2 garlic gloves minced

1/3 cup vodka

1 jar good quality tomato sauce

14.5 oz whole tomatoes crushed

1/4 tsp red pepper flakes

1 cup whipping cream

1/4 tsp black pepper

1/4 tsp salt

1/4 cup grated pecorino Romano cheese

4 sun dried tomatoes diced

Heat olive oil in large skillet, add prosciutto, cook 2 minutes, add shallots and garlic, cook until nice and tender

Add vodka, stir , add jar tomato sauce, tomatoes sun dried tomatoes, red pepper flakes, salt and pepper, cook and simmer 30 minutes, stir occasionally,

Add whipping cream and cheese, stir, cook 5 minutes

Serve warm sauce over penne. Eat warm or cold
