Pecan Crusted Chicken Salad

Recipe

4 boneless , skinless chicken breast

Prepare

Pound chicken breast both sides with mallet

2 tsp corn starch

Blend

3 egg whites

1/2 squeezed lemon

in medium bowl

For Crusting mixture

Combine

1 cup panko bread crumbd

1 tsp fresh parsley chopped

1 tso salt

1/2 tsp black pepper

zest from half lemon

Place ingredients on large platter

Time to cook

Dip chicken breast in egg mixture flipping twice,

dip chicken breast in bread mixture

Sautee chicken in 4 tbsp olive oil at medium heat cook till crispy, flip chicken add little more olive oil

cook again till crispy, place chicken on paper towel, let cool

Let rest 10 minutes

Slice chicken

Salad

mix greens

cherry tomatoes sliced in half

red onion slice thin

4 oz mild goat cheese crumbled

whole pecans chopped

fresh crack black pepper

Dressing

1/4 cup olive oil

1 tbsp honey

1 tbsp Dijon mustard

1 tbsp minced shallots

1 tbsp apple cider vinegar

1/2 lemon squeezed

2 large garlic gloves minced

salt and pepper to taste

mix well refrigerate few hours for more flavor

Place salad mixture on large bowl

Add sliced chicken

and Dressing
