Pasta Fagioli Soup

2 cups Ditali pasta cooked set aside

1 lb ground beef

3 tbsp olive oil

1 white onion chopped

4 celery stalks chopped with leaves

1 cup carrots chopped

4 garlic gloves minced

1 15 oz can diced tomatoes undrained

1 15 oz can great navy beans rinsed

1 15 oz can dark kidney beans rinsed

2 14.5 oz chicken broth

2 11.5 oz 100 percent vegetable juice v-8

1 tbsp fresh basil chopped

1 1/4 tsp oregano dried

1 tsp salt

1/2 tsp black pepper

1 tbsp dried parsley

1/2 tsp Italian seasoning

1 1/4 tsp onion powder

Cook ground beef until no pink on medium high, set aside

Add olive oil in a large soup, add onions, celery, carrots and garlic cook until nice and tender. Add cooked ground beef to pot and all remaining ingredients, bring soup to a boil reduce heat to low cover and cook all day, stir frequently.

Spoon soup into soup bowls and add cooked pasta, stir gently

Serve soup with fresh French bread.
