Parmasen Chicken Meatballs over Spaghetti

 

 

This Italian dish is absolutely amazing!

 

Meatballs

1lb ground chicken 10 percent lean

3 garlic gloves minced

1/4 cup grated Stella Romano cheese

1 tbsp dried parsley

1/4 panko bread crumbs

1/4 tsp salt

1/4 tsp pepper

Mix all ingredients together , shape into 4 round meatballs

Cover meatballs & refrigerate over night to enhance flavor

 

This recipe makes lots of sauce you will probably be only using a quarter of it, freeze or use remaining in a another Italian dish 

 

Sauce

2 lbs lean ground beef extra lean

1 tbsp olive oil

5 cups yellow onion diced

2 green peppers diced with seeds

5 garlic gloves minced

1 cup good red wine

4 oz tomato paste

2 45 oz good marina sauce

1/2 tsp red pepper flakes

2 tbsp dried parsley

2 tsp salt

1 tbsp sugar 1 tbsp dried oregano

5 bay leaves

1/2 cup  grated reduced Parmesan Cheese

 

Fresh Mozzarella cheese

 

Cook hamburger in medium sauce pan, till no pink

In a large pot , sautéed onions, garlic  & peppers in olive oil ,

they are nice & tender

 

Add all remaining ingredients in large pot with vegetables

except fresh Mozzarella cheese

Cook sauce all day  , stirring frequently

 

When sauce is done cooking; fill large frying pan with sauce; about

3 inches add meatballs & place 1 slice of fresh Mozzarella cheese

on top of each meatball: cover with lid, till Cheese melts

Serve meatballs over Spaghetti with a fresh bread
