Pan-Fried Cod

1 1/4 lb cod fillets

1/4 cup flour

2 egg beaten

1 cup panko bread crumbs

1/4 cup olive oil

salt and pepper to taste

Bay season splash

Creole seasoning splash

Prepare large skillet on medium with olive oil. Mix flour with 4 seasonings. Dip fish in flour both sides then dip into egg mixture allowing excess to drip off and coat with panko bread crumbs

Heat up oil till hot, add fish cook 4-5 minutes on each side or until crust is golden brown or flesh is flaky. Drain on paper towel.

Serve warm with home made tarts sauce or plain.
