Mushroom Soup

2 cups shitake mushrooms diced

1 cup white mushrooms diced

1 cup baby bella mushrooms diced

1 large onion diced

1/2 large red onion diced

3 garlic gloves minced

1 tbsp dried thyme

1 tbsp dried rosemary

1 tbsp olive oil

48 oz chicken broth

1 cup half & half

3 tbsp Marsala wine

1/2 tsp cayenne pepper ( optional )

salt & pepper to taste, more the better flavor

 

Clean the mushrooms with warm water

Heat a splash of olive oil in large pot over medium heat, add onions, celery, garlic,

thyme, rosemary & mushrooms, cook until soft, stir frequently

Add all remaining ingredients, bring soup to a boil, turn heat to simmer & cover with lid

Simmer 20 minutes

Use hand blender or blender and pulse soup, till a little chunky, not smooth

Simmer another 20 minutes
