Mix Berry Sauce
1 cup pineapple
1 cup strawberries
1 cup blueberries
1/4 cup sugar
1/4 cup water
1 tbsp lemon juice
Cream cheese filling
8. Oz cream cheese
1/2 cup powered sugar
1 tbsp lemon juice
Powered sugar for topping
Mix all crepe ingredients with a hand mixer, mix well and refrigerate several hours
Mix all cream cheese filling with a hand mixer, mix well and place in refrigerator several hours
Let’s begin making crepes
Place all berries mixture in small sauce pan on medium heat, cook for about 10 minutes and stir frequently, let cool in sauce pan
In a crepe pan add a small amount of butter cook on medium low heat, add a soup spoon of batter in pan cook till crispy and flip cook other side, place crepe on platter and add scoop of cream cheese mixture spread well and fold, repeat making crepes several times.
Place fruit mixture on top of cooked crepes and add sprinkled powdered sugar
This recipe make 6 crepes
3 of the crepes I added chocolate chips above the cream cheese mixture
Absolutely Amazing.
Breakfast sausage and bacon was a delight with the crepes.
