Low Fat Spinach Lasagna

1 tsp oilive oil

1 onion diced

1/2 green pepper minced

1 tbsp dried oregano

1 tbsp dried basil

2 garlic gloves minced

2 10 oz package frozen chop spinach, squeezed & drain water

2 32 oz jar spaghetti sauce ( I used Classico 3 cheese )

1/2 cup water

1 1/2 cups non fat ricotta cheese

1 1/2 cups low fat cottage cheese

1/3 + 1/3 cup shredded Mozzarella cheese

1/3 + 1/3 cup shredded parmasen cheese

1/3 + 1/3 cup low fat artisan blend cheese

2 tbsp dried parsley

1 tsp salt

1 tsp pepper

cooking spray

6 no boil lasagna noodles

 

preheat oven 350

 

In a large pot over medium heat saute onions, green pepper, oregano, basil,  & garlic

in the olive oil, til nice & tender, add spinach, stir till blended, add spaghetti sauce & water

Simmer 10 minutes

 

(cheese mixture)

In a large bowl mix cottage cheese, ricotta cheese, salt, pepper, parsley, 1/3 cup each of

mozzarella cheese, parmesan cheese & atisan blend cheese

 

Spray 9 x 12 pan with cooking oil

 

Place small amount of sauce bottom of lasagna pan, place 3 noodles on top of

sauce, layer with 1/2 cheese mixture, spread eveny

Place some more sauce on top of cheese

Add 3 more noodles

Add remaining cheese mixture

Finish off with all sauce

Add remaining 1/3 cup of mozzarella cheese, parmesan cheese & artisan cheese blend

 

Cover pan with foil, bake for 45 minutes, remove from oven, remove foil, bake additional

10 minutes, let lasagna rest for 15 minutes

Serve!

I cheat, I used no boil noodles, you would not believe how tender the noodles become

For cheesier lasagna add additional cheese
