Low Fat Scallop Potatoes

6 Idaho potatoes, peeled, sliced thin

1 onion slice thin

1 cup skim milk

2 tbsp flour

1 cup fat free chicken broth

2 cubs cube ham

1/2 cup low fat shredded cheddar cheese

1/2 tsp each

nutmeg, black pepper, salt, garlic powder & dried basil

 

(For Sauce)

  1. In small pan add milk, flour, all spices, cook & stir on medium heat

until thickened, add chicken broth, stir, remove from heat

2. Spray casserole dish with cooking spray

3. Layer potatoes, onions, ham-pour sauce over potatoes-repeat steps

4.  Sprinkle casserole with parsley, paprika & nutmeg, top off with cheese

 

Bake 350

Cover casserole with aluminum foil-bake 45 minutes

Uncover bake additional 10 minutes

(use left over spiral ham)
