6 large red potatoes, unpeeled, cooked & slightly cooled
Do not over cook
1/2 small onion, diced
3 celery stalks diced
1 cup fat free mayo
1 tbsp lemon juice
1 tbsp Dijon mustard
2 tbsp yellow mustard
2 tbsp white vinegar
1 dill pickle diced
dash hot pepper sauce
3 egg whites
(plus 1 egg for garnish)
Place potatoes in large bowl
Mix all remaining ingredients together & pour over potatoes, stir gently
Garnish with slice eggs, paprika & parsley
