Low Fat Ham & Potato soup

4 cups Yukon potatoes  peeled & diced

1/2 cup carrots diced

1/2 cup fresh green beans diced

1/2 cup celery diced

1/2 cup onion diced

1/2 cup fresh baby spinach chopped

2 cups diced ham ( I used left over spiral ham)

5 cups fate free chicken broth

1 bouillon chicken cube

1 tsp white pepper

1 tsp salt

1/2 tsp garlic powder

3 tbsp butter

3 tbsp flour

2 cups non fat milk

 

Combine potatoes, carrots, green beans, celery, onions, spinach, ham, chicken broth, &

1 chicken bouillon cube in large pot, bring to boil, continue cooking until every ingredient

is nice & tender about 15 to 20 minutes, stir in pepper, salt & garlic powder

 

Melt butter in sauce pan on medium heat,  whisk in flour, constantly stirring  ,until thick

around 2 minutes, slowly stir in milk so lumps do not form, continue stirring until thick, around 5

minutes

 

Pour the milk mixture in large pot & cook soup for around 20 minutes
