3 chicken breast. Place in zip loc baggie beat with heavy mallet
spray large sauce pan with cooking spray
2 tsp olive oil
1/4 cup vodka
1/2 cup free chicken broth
2 tsp lemon juice
1 tsp butter
1/4 cup fat free half & half
1 cup fresh diced tomatoes
Season chicken breast with salt , pepper & season salt,
then dust with flour ( I used gluten free )
Sauté chicken breast in oil on medium heat, cook both sides,
until nice & tender
Transfer chicken to platter
Deglaze pan with vodka
Add chicken broth, lemon juice, butter& free half & half, stir
Return chicken to pan
Top of with fresh tomatoes
Serve immediately
or
Sprinkle chicken with Italian cheese & broil till lightly crispy
