Low Carb Cabbage Lasagna

Grease 9 x 12 pan with cooking oil

Ingredients

1 head cabbage , peel cabbage leaves apart , steam and place on dish towel to drain

1/2 tbsp olive oil

1 large garlic minced

1/2 large onion chopped

1/4 green pepper diced

1/4 red pepper diced

1 lb ground beef cooked and drained

2 14. oz stewed tomatoes

1 tsp salt

1/2 tsp pepper

1/2 tsp dried basil

1 cup cotage cheese

2 cups ricotta cheese

1/4 grated parmesan cheese

shredded mozzarella cheese

For Sauce

1 large skillet

Cook beef and drain any fat

In another skillet

add olive oil, garlic, onions and green pepper, cook and stir till nice and tender, add ground beef , tomatoes, bring to boil simmer 15 minutes

For filling

In large bowl add cheeses, 1 tsp salt, 1/2 tsp pepper and 1/2 tsp basil

Place some sauce on bottom of pan

layer with cabbage leaves, sauce, filling and sauce again

Repeat 3 times

Bake cover for 40 minutes

uncover cabbage lasagna

sprinkle with some parmesan cheese and shredded mozzarella cheese

bake 15 more minutes

Let rest for 15 minutes

Slice and Serve
