Lasanga Soup

1 tbsp olive oil

1 large onion diced

1 small green pepper diced

5 garlic gloves minced

Chicken sausage (I use Amlyu with peppers & onions 4 links)

2 tsp oregano

1/2 red pepper flakes

1/2 tsp salt

1/4 tsp pepper

1 tbsp dried basil

2 tbsp tomato paste

1 15 oz can  dice tomatoes

1 15 oz  can diced fired  roasted tomatoes

6 cups chicken broth

lasanga noodles  broken into pieces

 

(Topping)

1 cup ricotta Cheese lite

1/4 cup reduced shredded Parmesan cheese

 

Sprinkle of Mozzarella & provolone shredded cheese

 

Heat oil in large pot on medium heat, add onions, peppers & garlic

Cook about 10 minutes, stirring frequently

add chicken sausage cut into tiny pices, cook & stir about 5 minutes

Add oregano, red pepper flakes, salt, pepper & basil, stir

add tomato paste, mix together about 5 minutes

add tomatoes & chicken broth, bring boil, turn down to

simmer for 45 minutes, stir frequently

Add noodles cook on simmer another 30 minutes

 

Spoon soup into bowls

sprinkle with shredded cheese & spoon topping on soup

 

If pasta is not cooking turn heat up a little

Taste like Lasagna
