Well worth the wait
Meat Sauce
1 lb lean ground beef
1 onion diced
1/2 green pepper diced
1/2 red pepper diced
5 garlic gloves minced
1 tbsp dried basil
1 tsp dried orgeano
pinch red pepper flakes
1 cup red wine blend
1/4 tsp salt
1/4 tsp pepper
1 28 0z can crushed tomatoes
1 28 oz whole tomatoes chopped
a 15 oz can tomato sauce
2 tbsp tomato paste
1 tsp sugar
1 tbsp fresh basil chopped
1 tbsp fresh parsley chopped
1 cup grated Parmesan cheese
8 lasagna noodles, cooked per instructions
Filling Spinach Lasagna Roll Ups
1 14.5 oz reduced ricotta cheese
1 cup cottage cheese
2 cups fresh baby spinach chopped finely
1 cup shredded Mozzarella cheese
1/4 cup grated Parmesan cheese
1 egg
2 tbsp fresh parsley chopped
salt & pepper to taste
(mix all above, till smooth)
Extra cheese for topping
Directions
In medium sauce pan, brown ground beef, stirring often to crumble, drain fat if need be
In a large pot saute the onions, garlic & peppers on medium heat, till soften
Add all ingredients in same pot as saute vegetables, cover sauce with lid, reduce to simmer
3-4 hours, frequently stirring sauce
Layer cook & drain pasta noodles on clean kitchen towel
spoon thin layer of ricotta filling down the entire length of noodle
Start from one end and roll up , repeat
Pre heat oven 350 degrees
In a 9 x 12 pan
- Place a small amount of sauce on bottom of pan
- Place the lasagna roll up over sauce
- Place spoonfuls of meat sauce of noodles
- Top of Lasagna rolls up with grated Parmesan cheese & Mozzarella cheese
- Cover with foil, bake 40 , remove tin foil& continue baking for 15 minute
Let rest for 15 minutes
Slice scoop & serve
