Healthy Breakfast Bake

1/2 onion diced

1/2 red pepper diced

2 cups fresh baby spinach diced

1 Canadian bacon diced

6 each healthy ham deli diced

 

Saute all above until nice & tender

 

(Mix together)

2 eggs

4 egg whites

1/4 skim milk

 

Combine vegetables, bacon & ham with egg mixture

Pour in cooking pan, with applied cooking spray

 

(Top off with)

2 low fat slice Swiss cheese diced

1 tomatoe diced

Sprinkle with salt & pepper

 

Bake uncovered at 350 for 35 minutes
