Garlic Red Smashed Potatoes

7 medium red potatoes

 

Preheat oven 450

Lightly oil cooking pan with cooking spray

 

In a large pot of boiling water, cook red potatoes until tender, about 15 to 20 minutes, drain water

 

Place red potatoes onto prepared baking pan, use fork or potatoe masher & carefully smash the potatoes,

until they are flattened, but still in one piece

 

(Top potatoes off with)

drizzled olive oil

1/2 tsp butter cubed

2 garlic minced

salt, pepper, & rosemary  to taste

 

Place potatoes in oven & bake for 20 minutes

Serve immediately
