Fresh Tomatoes with Pasta

1 lb spaghetti cooked as directed

3 tbsp olive oil

1 orange pepper diced

1/2 red large red onion

3 garlic gloves minced

2 cups cups baby spinach chopped

4 large chicken breast sliced

salt

pepper

oregano

parsley

5 fresh garden tomatoes chopped

1 cup olive oil

Grated Parmesan cheese

Shredded Asiago cheese

Balsamic glaze

Cook pasta dash with salt, rinse and drain set aside

On medium heat in large skillet add olive oil, orange pepper, red onion, garlic and baby spinach, cook until vegetables are nice and tender, remove vegetables, set aside

Add 1 tbsp olive to same skillet add chicken sprinkle with salt, pepper, oregano and parsley, cook till no pink, remove cut chicken into small pieces.

Chop tomatoes, set aside

In a large bowl add pasta and 1 cup olive oil mix well

Layer pasta on a platter, add tomatoes, vegetables, sprinkle pasta with grate Parmesan cheese, shredded Asiago cheese and drizzle with balsamic glaze

Serve warm or cold
