Dry Rub Whole Chicken

5-6 lbs whole chicken

 

(Dry Rub)

1 tbsp brown sugar

1 tbsp garlic powder

1 tbsp dry mustard

1 tbsp cumin

1 tbsp paprika

1 tbsp cayenne pepper

1 tbsp black pepper

1 tbsp onion salt

 

Mix all spices together

Spread rub all over chicken, including inside Cavit, cover chicken

Refrigerate chicken 2 1/2 hours or more

Preheat over till warm

Place chicken in roasting pan, cover pan with lid or aluminum foil

Cook for 2 hours

Take chicken out of pan & place on paper towel, allow chicken to cool & dry

Cook chicken outside on Weber grill with charcoal coals

Cook chicken till crispy
