Creamy Scallop Potatoes and Ham

9 x 12 pan sprayed with cooking oil

Pre heat oven 350

Ingredients

5 large potatoes sliced thick not peeled

1/2 onion sliced thick

2 garlic gloves minced

3 cups cooked ham

1/2 cup chicken broth

1/3 cup butter

2 cups whole milk

1 cup whipping cream

1/4 tsp salt

1/4 tsp pepper

1/2 tsp thyme

1 tsp paprika

1/3 cup flour

1/2 cup shredded cheddar cheese

Topping

1/2 cup shredded cheddar cheese

1/2 cup shredded white cheddar cheese

1/4 cup grated parmesan cheese

In large sauce pan melt butter , add onions cook and stir till tender. Add garlic cook 5 minutes. Add salt, pepper, thyme and paprika stir. Add flour, chicken broth, milk, whipping cream and 1/2 cup shredded cheddar cheese. Stir frequently, until sauce boils. The sauce will get thick.

Layer pan with potatoes, onions, ham and part sauce.  Layer scallop potatoes 3 times, top off with sauce, 1/2 cup shredded cheddar cheese, 1/2 cup shredded white cheddar cheese and 1/4 cup grated parmesan cheese.

Bake covered for 40 minutes, uncover and bake additional 30 minutes or till crispy and bubbly.
