Creamy Cajun Pasta with Shrimp and Sausage

1 lb large shrimp peeled and deveined

1/4 tsp salt

1/4 tsp pepper

1 tsp Cajun seasoning

1/2 tsp dried oregano

Olive oil

1/2 lb Beef Smoke Sausage. Thinly sliced

10 oz angle hair pasta

1 small onion chopped

1 green pepper. Chopped

4 tsp Cajun seasoning

1 tsp brown sugar

3 large garlic minced

1 12.5 oz diced tomatoes

1 cup chicken broth

1 cup whipping cream

2/3 cup grated Parmesan cheese

1 tbsp dried parsley

Mix salt, pepper, 1 tsp Cajun seasoning and oregano. Tossed over shrimp, mix well

Cover large pan with olive oil.

Add shrimp to pan cook on medium heat, cook 2 minutes per side. Remove shrimp, place on platter, add sausage, cook per side till nice and crispy , about 3 minutes per side, remove sausage on platter.

Add onions, peppers and garlic, cook till tender. Add brown sugar and 4 tsp Cajun seasoning, mix well. Add tomatoes, chicken broth and whipping cream, bring to boil. Add Parmesan cheese. Lower heat to warm, stir cook and stir frequently for 45 minutes, cover pan

Return shrimp and sausage to Cajun sauce, mix well

Serve over pasta , sprinkle with parsley
