Cream of Asparagus Soup

1 big bunch of asparagus, bottoms cut off & cut in half

6 cups vegetable broth

1 cup water

1/2 tsp butter

1 medium onion diced

1 celery stalk diced

1 tsp salt

1 tsp pepper

3 tbsp of lite sour cream

Saute butter, onions & celery till nice & tender

Place asparagus in pot & boil around 20 minutes

Place all ingredients in a blender, blend till nice & creamy

(p.s. you can cut back on the salt & pepper, I like a little kick)
