Crab Bisque Soup

1/2 cup onions diced

1/2 carrots diced

1/2 cup celery diced

2 whole garlic minced

4 tbsp butter

4 tbsp flour

1/2 cup chicken broth

1/2 cup white wine

1 cup whipping cream

2 tsp worchestershire sauce

1/2 tsp cayenne pepper

1 1/2 tbsp tomato paste

1 tbsp lemon juice

 

1 cup fresh crab

1/4 very dry sherry

 

Saute onions, carrots, celery, & garlic in large pot, till nice & tender

Add butter & flour, mix well

Add all remaining ingredients, (except no crab meat & very dry sherry) mix well

Puree soup with hand mixer

 

Add dry sherry, simmer 20 minutes…

 

This soup has a unique flavor, beware it’s a little spicy & a bit strong tasting
