Chicken Potstickers

These potstickers are are truly amazing !

I have to say they are not easy to make, but well worth it ,

1 lb ground chicken

1 cup diced Shittake mushrooms

3 garlic gloves minced

2 green onions thinly sliced with half greens

3 tbsp soy sauce

1/2 tsp sesame flavored chili oil

1 tbsp freshly grated ginger

1 tsp rice vinegar

1/4 tsp Black pepper

won ton wrappers

Vegetable oil

soy sauce for dipping

Directions ,,

In a large bowl, combine ground chicken, mushrooms, garlic,

green onions, soy sauce, sesame oil, ginger, rice vinegar, & pepper

mix well

To assemble the dumplings, place wrappers on a work surface, I

use a large cutting board.

Spoon 1 tablespoon of the ground chicken mixture into the center

of each wrapper.  Using your finger, rub the whole wrappers with

warm water , not a lot of water.  Fold the wrapper over  the filling to

create a half moon,  pinching the edges to seal.

I use a small edging tool to trim around the won ton, makes the

potstickers more attractive to eat , peel away the extra won ton &

disregard

Heat & drizzle small amounts of oil in a skillet over medium heat,

add potstickers in a single layer & cook until golden brown &

crispy, about 2-3 minutes per side

Serve immediately, with soy sauce

P . S . Eat the potstickers right away or they will get soggy
