Butternut Squash Soup

1 large squash, peeled, cubed & de seeded

1 large can diced tomatoes

1 box chicken broth

1 large onion chopped

3 garlic cloves minced

1/2 tsp cumin

1/2 tsp thyme

1/2 tsp ginger

salt & pepper to taste

Sprinkle of red pepper flakes

 

3 tsp olive oil

 

Saute onions & garlic in olive oil till nice & tender, add squash, tomatoes, chicken broth, & all remaining ingredients

Boil soup till tender, about 30 minutes.  Use hand blender & puree butternut squash soup.
