Breakfast Frittata

1/3 cup red onion diced

1 cup mushrooms diced

1/2 cup red pepper diced

1/2 cup Canadian bacon diced

1 cup baby spinach diced

1 tsp each pepper & onion powder

 

 

spray 10 inch pan with cooking spray

satuee all above, until tender, about 10 minutes

 

( for egg mixture)

2 eggs

4 egg whites

1/4 cup skim milk

1/4 cup reduced shredded cheddar cheese

 

mix all above & pour over pan

cover, cook on medium heat for 10 minutes

 

uncover frittata top with 1/4  cup shredded mozzarella cheese

&

1 slice tomate
