Beef Tamale Casserole

Preheat oven 350

9 x 12 pan sprayed with cooking oil

 

1 cup water

1/2 tsp salt

4 cups water

 

1.20 lbs lean hamburger

1 yellow onion diced

1/2 green pepper diced

1/2 red pepper diced

2 garlic gloves minced

2 tbsp chili powder

1 tbsp cumin

1 tsp ground oregano

1 tsp salt

1 tsp pepper

8 oz corn drained

1 16 oz kidney bean rinsed

28 oz crushed tomatoes

 

1 cup grated cheddar cheese

 

Make the corn meal by mixing corn meal, 1/2 tsp salt & 4 cups of water

place all ingredients in sauce pan on medium heat, bring to boil

reduce heat & cook, stirring, until thickened, about 5 minutes

 

In large skillet brown beef, until no pink, drain

In medium skillet cook onions, peppers & garlic till tender

In large skillet with beef add all ingredients, stir cook about 10

Minutes

place tamales mixture in prepared pan, spread corn meal mixture

on top of casserole

Sprinkle with shredded cheese

 

Bake uncovered, till bubbly about 30 minutes
