BBQ Pot Roast Over Cheddar Ranch Grits

 

This dinner is truly amazing comfort Food ! 

 

Crock Pot,  (sprayed with cooking oil)

 

2,5 lbs boneless chuck roast

 

1 cup flour

1/2 tsp salt

1/2 tsp pepper

1/2 tsp onion powder

1 tbsp olive oil

Mix flour, salt, pepper & onion powder together

Add olive oil to sauce pan on medium  heat

Dredge roast into flour mixture, coating all over

Pan fry roast for about 4 minutes per side, till a little crispy

 

(sauce)

1 can coke

1/2 12 oz chili sauce

1 tbsp worchestershire sauce

1/2 tbsp tabasco hot sauce

1/2 tbsp cholula hot sauce

 

1/2 tsp salt

1/2 tsp garlic powder

1/4 tsp pepper

1/2 Hungarian paprika

 

3 tbsp cornstarch

1/4 cup milk

 

Place roast in crock pot

Sprinkle with salt, garlic powder, pepper, & paprika

 

Mix together coke, chili sauce, worchestershire, & both hot sauces & pour over roast

Cover & Cook roast on high for 1 hour, turn to low & cook 5 hours

Take roast out of crock pot & set aside

Reserve juices in crock pot

Combine cornstarch & milk

stirring well, stir into crock pot, cook , uncovered on high for 15 minutes or until thickens

stirring frequently

 

Grits

1/1/2 cups quick cook grits  not instant

3 cups chicken broth

2 tbsp dry ranch dressing

2 cups shredded cheddar cheese

 

Over medium heat, in sauce pan, add chicken broth, bring to boil

add grits & ranch dressing stir, till thickens, add cheddar cheese

mix well till cheese is melted

 

Shred roast place back in crock pot

Place grits on platter & add shredded beef over grits
