BBQ Chicken Chili

1 tbsp olive oil

1 cup red onion diced

1 cup yellow onion diced

3 garlic gloves minced

1 jalapeno pepper minced

1/2 red pepper diced

1/2 yellow pepper diced

1/2 green pepper diced

1 tbsp paprika

1 tbsp cumin

3 tbsp chili powder

1/2 tbsp black pepper

1 tsp salt

pinch red pepper flakes

12 oz jar roasted red peppers in water, drained & chopped

1 can kidney beans drained

1 can cannellini beans drained

3 cup fat free chicken broth

1 20 oz stewed tomatoes

1/2 barbecue sauce

1.25 lbs ground chicken, low fat as possible, cooked , I used Amish ground chicken

Heat a large pot over medium heat & add olive oil, peppers, onions & garlic.

cook about 10 minutes or until soft, add paprika, chili powder, black pepper,

salt, cumin & red pepper flakes, stir & cook about 5 minutes

Add all remaining ingredients to large pot, stirring to combine

Bring chili to a slight boil, turn down heat to simmer & cover with lid

Cook about 45 minutes, stirring frequently
