1 bunch asparagus
1 tbsp olive oil
1 tbsp butter
1 large sweet onion diced
3 garlic gloves minced
5 cups chicken broth
salt & pepper to taste
1/2 cup half & half
Melt butter & olive oil in medium sauce pan, add onions & garlic
cook until soft & tender, around 10 minutes
Cut asparagus into 1 inch pieces
add water to large pot & add asparagus
cook on meidum heat for about 30 minutes, till asparagus is tender, drain
Add all ingredients in large pot, bring soup to boil
return to simmer, cover cook 30 minutes
Puree the soup with a blender until completely smooth
return soup back to pot, cook another 20 minutes
