Amazing Chicken Marsala

 

 

This Chicken Marsala Truly is Amazing!  Enjoy

 

1.5 lbs chicken breast

8 oz Baby Bella mushrooms, sliced thin

8 oz fresh white mushrooms, sliced thin

4 garlic cloves minced

2 tsp dry parsley

1 large shallot diced

1 medium sweet onion

2 tbsp. flour

1/2 tsp black pepper

1/2 tsp salt

2 tbsp olive oil

2 tbsp. butter plus additional 2 tbsp. butter

1/2 cup dry vermouth

1/2 cup cream sherry

1 cup whipping cream

1/4 cup water

 

Place chicken breast between 2 pieces of plastic, beat each breast a few times with a mallet

Heat 2 tbsp. olive oil and 2 tbsp. of butter in large skillet, on medium high heat

Place flour, pepper and salt in a bowl, mix well

Add chicken to flour bowl, flip twice, shake off excess flour, cook breast 4 to 5 minutes per side, until golden brown , place on a platter, keep warm.

Add shallots and garlic to same skillet, cook about 5 to 6 minutes per side, stirring frequently

Add the additional 2 tbsp. of butter and sliced mushrooms, stir and cook until mushrooms are nice & tender

Add Vermouth and  Cream sherry, stir , add whipping cream

Place chicken back in skillet, scooping mushroom mixture on top of chicken,

Add more salt and pepper to your liking, if desired

Cover & simmer for about 40 minutes

Serve over rice or mash potatoes, delightful
