Split Pea Soup With Ham Hock

16 oz dried split peas rinsed

1 tsp olive oil

4 garlic gloves minced

1 1/2 onions chopped

2 celery stalks chopped with leaves

2 cups carrots chopped

8 cups fat free chicken broth

1 cup water

1 tbsp salt

1 tbsp pepper

 

In large soup pot add olive oil & garlic, cook couple minutes,

add onions & celery, carrots, stir , cook 10 minutes , add split peas

Ham hock, chicken broth, water, salt & pepper, stir well

Bring soup to boil, reduce heat to medium low, cover

stir occasionally

cook 2 hours

take ham hock out of pot, let the bone rest, keep cooking soup,

For other 1 hour

cut off remaining ham & place back in pot

 

Serve immediately

So yummy on a chilly night!

Soup should not be thick & pasty add a little water if you need to
